Baton began his career at Quo Vadis restaurant in Soho. His work has taken in a breadth of restaurant and bar brands; working with Gordon Ramsay at The Savoy Grill, Sir Terrance Conran, (now D&D), Brompton Brands, Heston Blumenthal and St Martin’s Lane Hotel. Baton joined Caprice Holdings in 2014 where he opened the first Ivy Collection restaurant in Covent Garden. As Operations Director he was responsible for the successful roll out of The Ivy Collection before becoming initially Managing Director and later in 2020 CEO of the group, encompassing Caprice Holdings, Birley Clubs, The Ivy Collection and Bill’s.

Baton joined The Wolseley Hospitality Group as CEO in September 2022.
