Cesar, Our Bar Manager at The Wolseley
Cesar Goncalves first joined The Wolseley back in 2016 as a bartender. Now, he is at the helm, running a smooth operation as Bar Manager. We spoke to him to find out a little bit more about him and why a career in hospitality is so rewarding.
How did you get into bar management?
I was born in Brazil, but then we moved to Portugal and I grew up in Lisbon. While I was studying there, I used to wait tables - after I finished, I decided to move to London (almost seven years ago now!), and working in hospitality was a natural progression.
In a way it was pure chance, I had got a job as a waiter, but on my first day I was asked to go behind the bar and I realised that's where I wanted to be. After a year, I went for a job at Zédel, but ended up being asked to do a shift at The Wolseley and like they say the rest is history.
What's the best thing about working at The Wolseley?
It being so classic is definitely a unique draw, but I would say my team above everything else. I really enjoy working with them all and building a team who love working here as much as I do.
The support you get from the directors/senior team and opportunities to grow with Corbin & King is also fantastic - I started off as a bartender here just over five years ago, and now I am the Bar Manager!
I have done shifts at all the other C&K restaurants when extra support has been required, which is also great to see how the other sites operate, but I'm really glad I came here to The Wolseley…
When you're not at The Wolseley, which Corbin & King restaurant do you like to dine/drink at?
It has to be Bellanger in Islington. It has such a good vibe, the space is beautiful and the bar is expansive - it's a great spot for cocktails!
What one piece of advice would you give to anyone wanting to get into hospitality?
Attitude is absolutely the most important thing. With a positive attitude and being open to learning, you can go really far in this industry.
It's always a pleasure to know someone has enjoyed their experience - and it is satisfying being able to make someone's day a little better.
You also have opportunities to learn from others, gain knowledge and develop skills you may not expect. For example, I love wine, but I have learnt so much about what makes a good wine and what to pair with food from working in this industry, as well as some very useful cooking tips from our chefs here!
